1 sachetbaking powder
1 tbspguar gum
1/2 tspsalt
1 tspground cinnamon
150 gsugar
2eggs
30 mlcondensed milk
or regular milk
30 mlmelted butter
30 mlsunflower oil
2 mlrum extract
100 gwhite chocolate chips

To get started with these condensed milk muffins, you’ll need the following ingredients:

Line a muffin tin with muffin cases. Mix the flour, baking powder, guar gum, salt and cinnamon in a bowl, stirring once.

In another bowl add the sugar and eggs, using an electric whisk to double the mixture. Then add the condensed or regular milk, melted butter, oil and the rum extract.

Gradually sift the flour mixture, whisking until just combined. Incorporate the chocolate chips but don’t over-mix, otherwise the muffins will be heavy.

Evenly spoon the mixture into the muffin cases. Top with ground walnuts, raisins, almond flakes, dried or fresh fruits. Bake the condensed milk muffins for 25-30 minutes at 180 °C.
