Sift the flour and guar gum into a mixing bowl. Add the egg, yolk, butter, sugar and salt, mixing with your hands until the dough comes together. Shape it into a ball, cover with cling film and chill in the fridge for 1 hour.

Separate 2 eggs and whisk the whites in a bowl until medium peaks form. In another bowl, add the cottage/ricotta cheese, sugar, salt, the peel and the juice of the lemon. Whisk until combined, then add the yolks and gradually fold in the whites. Add the corn starch and incorporate.

Peel, core and cut the apples into 5 mm thick slices.

Brush the loose-bottom tart tin with butter and spread the dough, letting it chill for another 10 minutes. Preheat the oven to 190 °C.

Arrange the apple slices inside the tart, overlapping them slightly, in an attractive spiral. Pour over the cheese mixture, level it out and bake for 50 minutes. After it has cooled down, cut the gluten free apple cake into slices and serve.
