480 gSchär Mix Bread
1 tbspguar gum
1 & 1/2 tspsalt

Add the sugar to a bowl, sprinkle the yeast and pour in the lukewarm water. Sift the flour and guar gum into the bowl, adding the salt and gradually the oil.

Knead the dough with your hands for about 10 minutes and shape it into a soft, pliable ball. Cover with cling film or a tea towel and leave it in a warm place for 30 min.

Line a baking tray with baking sheet and preheat the oven to 250 °C. Turn the dough out onto a floured surface and divide into 8 pieces. Wet your fingers and shape up 8 small gluten free baguettes of about 10 cm.

Slice the baguettes 3 times with a knife and brush them with an egg yolk. Bake on the middle rack of the oven for 18-20 minutes. Slice horizontally and serve with mozzarella and tomato slices.
