sunflower oil for frying
skewers for frying

2 tbsp mayonnaise
1/2 tsp ground cayenne

To get started with this gluten free corn dogs recipe, you’ll need the following ingredients:

Sift the flour, guar gum and baking powder in a bowl, add the salt, sugar and break in the eggs. Whisk until combined, add the milk and corn meal. Add 1 more tablespoon of flour and corn meal if the mixture is too liquid.

Heat the oil in a large pot or dutch oven. Pour the flour mixture into a glass and push the sticks into the hot dogs, dipping them into the glass. Twirl the stick to fully coat the hot dog and let the excess drip off.

Gently lower the corn dogs in the hot oil and fry them for 2-3 minutes, or until golden brown. You can fry 3 at a time, then transfer them to a wire rack to cool down. For the sauce, mix the mustard with the mayonnaise and the ground cayenne until combined. Dip the corn dogs into the sauce and serve warm or cold.
