150 g Schär Mix Pâtisserie
1 tbsp guar gum
600 ml milk
1 lemon peel and 1/2 tsp juice
225 g tropical fruits mix pineapple, mango & guava
icing sugar to dust

To get started with this quick gluten free dessert, you’ll need the following ingredients:

Separate 5 eggs and whisk the yolks, icing and vanilla sugar with a hand-held electric mixer. Add the melted butter and incorporate it on low speed. Sift the flour and guar gum over the mixture, mixing constantly. Gradually add the milk and mix until you get a smooth texture.

Beat the egg whites in a bowl with an electric mixer, until smooth and creamy. Add the lemon juice halfway through. Pour the fruit mix into a food processor or blender and blitz to a smooth consistency. Preheat the oven to 160 °C.

Incorporate the egg whites into the initial mixture using a spatula. Fold in the blended fruits and peel the lemon.

Spread out the mixture into a baking tray lined with non-stick parchment paper and bake it for 1 hour.

Once baked, sift icing sugar over the cake and cut into 8 squares.
