These homemade coconut candies are the perfect sweet treat for any occasion.

Made with coconut flakes, ground almonds, and a fantastic vanilla flavor, they're similar to the famous Raffaello chocolates but even better because you made them yourself!

To get started with the gluten free raffaello, you’ll need the following ingredients:

Keep the coconut in the refrigerator or freezer for at least 30 minutes before using it. Then, transfer the solid part of the milk into a bowl and add the icing and vanilla sugar, stirring.

Add the ground almonds and coconut flakes, along with the vanilla extract. Use a spatula to mix everything and then keep the mixture in the fridge for 1 hour.

Take the bowl out of the fridge and use a teaspoon to scoop up the candies. Pass them through coconut flakes, multicolor chocolate balls or ground dried strawberries, covering their whole surface. If you think that the candies are too soft, keep them in the fridge for another 20-30 minutes.
