Melt the chocolate, butter and simple syrup in a heatproof bowl, set over a saucepan of simmering water. Stir occasionally, while making sure that the bottom of the bowl doesn’t touch the water.

Stir in the orange peel, carob powder, biscuits, apricots, almonds and raisins. Mix for 1 minute and turn off the heat.

Line a large cling film on the work surface and transfer the mixture in the middle of it. Roll from top to bottom, twist off the sides and slightly roll it on the counter top, creating a circular shape.

Refrigerate for 2 to 3 hours. Serve cut into slices. For the sauce (optional), blend a banana and add a drop of green food coloring in the food processor or blender.
