Spinach Roll Ups with Cream Cheese

Steps

Add the baby spinach in a food processor, with the egg yolks, milk, and oil. Blitz until smooth. Transfer to a bowl.

In a separate bowl, pour in the egg whites, add the salt and beat with a handheld mixer until firm peaks.

Gradually add the beaten egg whites to the spinach mixture, then sift in the flour with the baking powder. Line a baking tray with parchment paper and pour in the mixture. Level it up and bang the tray on the working surface to remove any air bubbles. Bake for 15 minutes at 160° C.

As soon as you take the batter out of the oven and the tray, start rolling it upwards from the larger edge, using the parchment paper. Let it chill for 10-15 minutes, unroll it, spread the cream cheese on the whole surface, then lay down the pieces of
ham. Use the same procedure to roll it once again then refrigerate it for 2-3 hours.
