1 kg trout gutted & cleaned
3 tbsp extra virgin olive oil
1 lemon sliced
6 brown mushrooms
200 ml cooking white wine
1/2 tsp salt
1/2 tsp pepper
Sauce
200 g greek yogurt
1 onion finely chopped
1 red pepper finely chopped
1 sprig parsley chopped
1/2 lemon juice only
1 tsp salt
1 tsp pepper
1 tsp paprika

Preheat the oven to 180 °C. After cleaning the trout, score it 4-5 times vertically on one side.

Place in a shallow ovenproof dish, drizzle the oil and place the lemon slices into the cuts. Scatter the mushrooms over the fish, pour in the wine and season with salt and pepper. Bake for 30-35 minutes or until cooked through. Test by piercing a thick area of the trout with the tip of a knife, the flesh should flake easily.

For the sauce mix in a bowl the Greek yogurt with the onion, red pepper, parsley and lemon juice. Season with salt, pepper and paprika.

Serve with the sauce and lemon or lime wedges.
